Since we made homemade pizza dough last time, it only makes sense to make fresh tomato sauce to go on top. Since I've started cooking more, I've felt more and more guilty about using instant ingredients with my freshly made food. I figure if I'm going to put that much effort into creating something from scratch, it's a tragedy to toss in something made in a factory.
This tomato sauce is pretty quick and very nice for pizza or calzone.

What we'll need:
-3 to 4 Large ripe tomatoes (or one can crushed tomatoes)
-about 4 basil leaves
-2 tsp Olive Oil
-1 clove garlic
On to the cooking -
1.If using fresh tomatoes, blanch them for about 30 seconds, then dip into ice water. This will allow you peel the tomatoes. Cut in half and squeeze out the seeds. Crush the tomatoes in your fist until they are pulverized into a bowl and set aside.
If using canned tomatoes, simply hold on until the tomatoes are needed.
2. Finely chop garlic and add to saucepan with the olive oil. Heat until they start sweating.
3.Add the tomatoes and season with salt and pepper.
4. Chop the basil and add to the sauce.
5. Using a hand blender, blend the sauce into smooth. (This is so it can spread easily on the pizza dough).
6. Simmer for 10 minutes and let cool.
That's it. Use it on your pizza dough or as a dipping sauce for calzone.
